- 1 large gold sweet potato, peeled, cut into 2cm pieces
- 1 red onion, cut into wedges
- 500g pkt Coles Finest Australian Angus Beef Sausages
- 250g vine-ripened cherry tomatoes
- 120g pkt Coles Australian Baby Spinach

Method
- Step 1 Preheat oven to 200°C. Arrange the sweet potato and onion in a shallow baking tray. Spray with olive oil spray and season. Bake, turning occasionally, for 20 mins or until the sweet potato is tender.
- Step 2 Meanwhile, heat a frying pan over high heat. Cook the sausages, turning, for 4 mins or until brown all over. Transfer sausages to the tray with the tomatoes. Bake for a further 10 mins or until the sausages are golden brown and tomatoes begin to collapse.
- Step 3 Sprinkle the tray bake with spinach. Serve immediately.
