Ingredients (8)
- 2 tbsp pistachio dukkah (see notes)
- 8 hard-boiled eggs, peeled
- 1/3 cup mayonnaise
- 2 green onions, thinly sliced
- 4 white chia wraps
- 4 baby cucumbers, cut lengthways into thin wedges
- 40g baby spinach
- 1 1/2 tbsp extra virgin olive oil

Method
- Step 1 Heat a small frying pan over medium-low heat. Cook dukkah, stirring, for 30 seconds or until fragrant. Transfer to a bowl.
- Step 2 Place eggs in a bowl. Roughly mash with a fork. Add mayonnaise, dukkah and onion. Season with salt and pepper. Stir to combine.
- Step 3 Place 1 wrap on a flat surface. Spoon ¼ of the egg mixture along centre of wrap. Top with 1/4 of the cucumber and spinach. Drizzle with ¼ of the oil. Fold over 1 end. Roll up to enclose filling. Repeat with remaining wraps, egg mixture, cucumber, spinach and oil. Serve.
